ROASTED CAULIFLOWER

Roasted cauliflower is a delicious alternative for you to enjoy in your weekly meal rotation . This can be the center of your plate and be the star of your meal or you can pair it with your salad, with tortillas and beans and enjoy them as tacos . The options are limitless.

INGREDIENTS:

Roasted Cauliflower:

1 stick butter

3 tbsp Cardenas taco seasoning

1/2 fresh lime juice

Tomato Sauce :

6 roma tomatoes

60 oz water

6 garlic cloves

2 tbsp chicken bouillon

2 tbsp mexican oregano

1 tbsp flour @bobsredmill

1 large white or yellow onion

canola oil to coat the cast iron skillet

INSTRUCTIONS:

1. Start by cleaning all your produce remove any access leaves if there are any that are damaged .

2. Get a pot of water and fill it up halfway to allow room for the cauliflower to be placed inside .

3. Cook the cauliflower for 10-15 minutes depending on the size .Once it’s soften you add it to a roasting pan or baking sheet lined with silicone .

4. In a separate bowl melt down 1 stick of butter and 3 tbsp your favorite taco seasoning a whisk together .

5. Drizzle the mixture onto the cauliflower and place it in the oven at 410 F for another 15-20 minutes until golden brown . Then place on the broiler for 5 minutes to get it extra crispy .
