TROPICAL PINEAPPLE SWEET POTATOES

Sweet potatoes are my favorite vegetable because they are extremely versatile to use in the kitchen. These dairy free, plant based, vegan tropical pineapple sweet potatoes is my personal take on the traditional sweet potato fluff that so many enjoy during the Holiday times.

INGREDIENTS:

Dairy-Free Plant Based, Soy, Vegan

  • 4-5 Large Organic Sweet Potatoes

  • 2 15 oz Pineapple Chunks or Crushed Pineapple

  • 3 Tbsp Plant based butter

  • Saigon Cinnamon

  • Sugar

  • Vegan Marshmallows

    INSTRUCTIONS:

    To prepare this dish you will need to start by peeling the skin of all of the 4-5 large sweet potatoes. Then rinse of all the excess dirt from the potatoes. Begin to cut the sweet potatoes but make sure you don’t cut them to thick as this will add to the time they need to cook in the oven. You want them to be a medium sized thickness. Get a glass dish and spray it evenly with cooking spray I prefer to use Canola Oil.

    Grab your sweet potatoes and spread them evenly across the dish as you want to allow them to have space to cook and for the other ingredients. Once they are placed inside the dish you will then need to open up both of your Pineapple Chunks. Drain half of the pineapple juice out of both cans. DO NOT TAKE IT ALL OUT as you will need it to add to your dish to create additional flavor and create a moisture bed for our sweet potatoes. Add in your saigon cinnamon and sugar to taste. Lastly, add in your plant based butter roughly 3 Tbsp worth I personally love to pair this dish with @earthbalance . Toss the sweet potatoes and pineapple to make sure everything is evenly distributed in the glass dish. Cover with foil and cook it in the oven at 350 F for 30-35 minutes until everything is tender. You want to be able to poke a whole easily through them. Optional : Add on top vegan marshmallows and put back in the oven until the marshmallows are melted and golden brown.
