VEGAN BLACK BEAN SOUP

Vegan Black Bean Soup is a delicious ten ingredient soup for you and your family to enjoy and it takes about 30 minutes to make from start to finish. Here’s what you need to make it.

INGREDIENTS:

1 tbsp olive oil

2 large brown or white onions

6 garlic cloves

2 medium carrots

6 celery rubs

3 cans black beans

4 cups vegan chicken broth

1 tsp cumin

1 tsp sea salt

1 tsp black pepper

Toppings : avocado, sour cream, diced tomatoes, jalapenos, shredded cheese or tortilla chips

INSTRUCTIONS:

1. Add your olive oil to a pot and start to saute the garlic, onion, carrots and celery

2. Add salt, cumin, black pepper

3. Drain the cans of black beans in your sink and rinse of the extra liquid then place them inside your pot

4. Add water and your chicken bouillon to the pot and stir it in

5. Cook for 15 minutes

6. Place 3 cups in the blender or use an immersion blender right inside of your pot to make it a creamy consistency

7. Top with either avocado, sour cream, diced tomatoes, jalapenos, shredded cheese or tortilla chips
