MANGO CHICKPEA SALAD
This recipe comes together with simple ingredients that come from your pantry and fridge . Perfect for when you’re looking to attend the spring and summer get togethers or for your next meal prep. Here’s what you’ll need to make it on your own . Feel free to enjoy on it’s own or as a side or with a fresh tostada.

INGREDIENTS:
2 cans drained chickpeas
4 persian cucumbers
12 oz cherry tomatoes
1 medium purple onion
1/2 bunch fresh cilantro
1/2 bunch fresh basil
1 large fresh mango
4 serrano peppers with seeds for heat or substitute jalapeno for less heat
2 fresh limes for juice
1 tsp sea salt
INSTRUCTIONS:
1.Start by draining your canned chickpea in the sink . Reserve the chickpea juice for egg substitute in the fridge .
2. Pour chickpeas in mixing bowl
3. Add in Parisian cucumbers , tomatoes , purple onion , mango , salt and fresh lemon juice and toss and enjoy!
4. If you’re preparing this for meal prep or party don’t add in the lemon juice or avocado until you’re ready to enjoy.
