SPANISH RICE
Spanish rice that is ready in 40 minutes and will be a perfect pair and addition to your vegan Mexican food. In our home we like to pair this with tacos, stuffed poblano peppers and more! INGREDIENTS:
4-5 roma tomatoes
1 large white onion
2 cups white rice
2 tbsp cumin
2 cups water
2 tbsp canola or vegetable oil
2 tbsp tomato boullion
INSTRUCTIONS:
1. Start by cleaning your tomatoes
2. Blend tomatoes and white onion in blender until its liquid
3. Fry garlic in oil with rice until golden brown
4. Add in tomatoes and onion mixture to pot
5. Add in 2 cups water with tomato bouillon
6. Add in veggies if you want they can be jalapenos, serranos, corn or green beans fresh, canned or frozen
7 . Place in oven at 375 F for 35-40 minutes covered with foil until fluffy then let it sit for 15 minutes before serving
