AVOCADO CHICKPEA HERB SALAD

This seven ingredient avocado chickpea herb salad is perfect as a side dish or as a main dish to enjoy when you are looking to get in some delicious fruits in and looking to switch up your salad game! I personally love to interchange the herbs in this dish with either fresh basil, cilantro or with parsley. So feel free to experiment with what you have on hand and add it into your dish .

Start by cleaning off your canned chickpeas in a strainer and run it over with some cold water. You can keep the juice from the chickpeas and use it as an egg replacement so feel free to keep it in a jar and reserve it for later. Once the chickpeas are clean go ahead place it into a mixing bowl , add in your salt, pepper,limes and cut up you tomatoes, herbs and toss in your avocados at the very end. Enjoy this salad the same day if you want to make it ahead of time then you can do that by preparing for the night before however you want to add in the lime and avocado.

INGREDIENTS:

1-2 fresh avocados

1 branch basil

1 canned chickpeas drained

3 tomatoes

1 tsp sea salt

1 tsp black pepper

1 lime fresh

INSTRUCTIONS:

1. Start by cleaning off your canned chickpeas in a strainer and run it over with some cold water.

2. Place the chickpeas in a mixing bowl and then add in your freshly squeezed lime juice, sea salt , black pepper and then add in your clean tomatoes

3. Add your fresh herbs

4. Add your avocado at the end and toss gently
