PICKLED CARROTS, JALAPENOS AND ONIONS
Pickled carrots, jalapenos and onions are a delicious addition to your dishes and the best part is they come togehter rather quickly and more than likely you have most ingredients on hand to make them. Here’s what you’ll need them. In our home we like to enjoy them with soy chorizo, potato tacos or with tofu. INGREDIENTS:
6 medium / large carrots
2 large white onions
6 jalapeños
4 -6 garlic cloves
4 bay leaves
1 tsp sea salt
1 tsp Spanish oregano
distilled vinegar to cover the veggies up
3 tbsp neutral oil
INSTRUCTIONS:
1. Start by cleaning all veggies and peeling the skin of the carrots with a vegetable peeler . Then cut them either round or on a diagonal .
2. Pierce your jalapeno peppers with a fork to create wholes all over
3. Cut your white onions
4. Add your neutral oil to a skillet and lightly coat the carrots , onions , jalapeños , garlic and bay leaves .
5. Once everyhing is seared then add them to a jar and add I your distilled vinegar and let them set for at least two hours or overnight for more flavor .
6. Enjoy on their own or with your favorite tacos, tofu or as a delicious side
