VEGAN SWEET POTATO PIE
Vegan sweet potato pie that comes together in one bowl and is sure to delight your guest whether they are vegan or not. Promise this will not disappoint but keep your guest curious as to what exactly you put into it :) Here’s what you’ll need to make it and be sure to share with me below how it turned out for you. For the crust we are using a store bought crust as most are vegan by accident but as I always encourage read those labels my friends. Lastly, the recipe below makes two sweet potato pies so make sure you have enough pie crusts and this is freezer friendly. Hope that you give this a try and enjoy with your favorite vegan whipped cream or ice cream on top!
INGREDIENTS:
4-6 medium sweet potatoes
1 can coconut milk
2 cups brown sugar
2 tsp vanilla extract
2 tsp saigon cinnamon or regular cinnamon
1 tsp nutmeg
1 tsp sea salt
8 tsp cornstarch
INSTRUCTIONS:
1.Boil sweet potatoes in water in a pot over your stovetop. Cook until they are tender and a fork goes all the way through.
2. Mix sweet potatoes in mixer until smooth
3. Add in brown sugar, cornstarch, cinnamon, vanilla, nutmeg and sea salt
4. Add to pie crust and cook at 350 F for 55-60 minutes this recipe will make (2) sweet potato pies
5. Allow pie to cool on cooking rack for 60 minutes so it can set and it will be good for 5 days in the fridge and can be added to the freezer just be sure to have it wrapped tightly.
