GRILLED CORN & POBLANO HOT CAKE

Grilled Corn & Poblano Hot Cakes inspired by my fellow friend Steph from @viewsontheroad these are great either savory or sweet the option is up to you or be like me and have them both ways. if you choose to have it savory then add fresh pico de gallo which has diced tomatoes, white onions, cilantro and jalapenos or serrano. Or if your a fan of sweet then add your favorite maple syrup and whipped cream on top.

INGREDIENTS:

3 cups frozen or canned corn

2 large poblano peppers

1 cup all purpose flour

1 1/2 cup almond milk

1 tbsp baking powder

1 tsp sea salt

1 tsp baking soda

1 tsp sugar

1 tsp avocado oil

1 tsp granulated garlic

1 stick butter

INSTRUCTIONS:

1.Add avocado oil , corn and poblano peppers to a cast iron skillet

2. Season with garlic , pepper, sea salt cook until golden brown

3. Add in cooked corn and poblano to blender along with the flour , baking powder and baking soda .

4. Add in almond milk

5. Use same cast iron skillet add in butter and pour the batter into the skillet with a ladle to form pancakes. Once the bubbles form in the middle of the pancakes then flip .

6. Top with syrup or vegan mayo , Tajin , or pico de gallo
