BUTTERNUT SQUASH PASTA
This is a perfect dinner recipe for you to enjoy in the Fall when butternut squash is in season. To make things easier with this recipe you can save time by getting already cut and cubed squash from the store. The sauce comes together easily by steaming the squash for 10-12 minutes on the stovetop with water until completely fork tender. Then we add a few other pantry staples to get the pasta completed in roughly 20 minutes. Here’s what you will need to make it for your family! INGREDIENTS:
1 lb butternut squash
2 cups water
2 tbsp cornstarch
1 cup nutritional yeast
1 tsp black pepper
1 tsp onion powder
2 lemons fresh juice
1 1/2 tsp sea salt or to taste
1 box pasta
optional veggies : peas or roasted broccoli
INSTRUCTIONS:
1. Cook the pasta according to the package add sea salt to pasta once the water is boiling hot then drop in your pasta
2. Add your water and butternut squash to a pot and cook for 10-12 minutes until they are fork tender and soft
3. Place butternut squash in a high speed blender or immersion blender and bowl the following ingredients: cornstarch, nutritional yeast, onion powder, lemon juice and black pepper.
4. The cheese sauce mixture you just created add it to the cooked noodles and stir until combined and serve immediately
5. Optional add in your veggies over top like roasted broccoli or steamed peas
