VEGAN FOCACCIA
Focaccia bread is a dimpled Italian flat bread that is made with a few ingredients such as yeast, flour and lots of olive oil and you can use seasonal toppings like fresh tomatoes or herbs . Personally, the thing I love about making this bread is playing around with the dimples is adding fresh garden veggies and decorating it with my kids. Plus its so damn delicious with a fresh pasta or you can use this crust for a homemade pizza .
INGREDIENTS:
4 cups all purpose flour or bread flour
2 tsp sea salt
1 packet instant yeast
2 tsp granualted sugar
2 cups warm water
6 tbsp olive oil , divided
vegan butter to grease the pan
tomatoes for decorating
fresh herbs like rosemary, sage, oregano
INSTRUCTIONS:
1. In a large bowl stir together flour,
2. Pour in the warm water and mix with a rubber spatula until a sticky dough forms
3. Add 2 tbsp olive il to the bowl and coat the outside of the bowl flipping it over inside the bowl
4. Cover the bowl with a clean damp kitchen towel or plastic wrap and place it in the fridge for 12 hours overnight or up to three days .
5. Transfer the dough to the prepared pan and roll the dough ball in the oil and to coat it all over. Cover the pan and let the dough rise for 2 to 3 hours at room temperature until the dough covers most of the pan and has expanded
6. Heat oven to 425 F
7. If you are using fresh herbs coast 2 tbsp olive oil on the dough and press dimples with your hands by pressing down.
8. Gently stretch the dough to fill the pan as you make the dough
9. Bake for 25- 30 minutes until golden brown
10. Transfer to cooling rack and let cool for 10 minutes or longer before slicing and serving.
11. Optional toppings include sliced peppers, asparagus, green onions, olives or various tomatoes
