SPICY CHILI CUCUMBER SALAD

My nine ingredient spicy chili cucumber salad will be your new raw salad for you to enjoy! It comes together beautifully in one bowl and utilizes simple pantry staples. Be sure to add this one into your weekly rotation no matter the season.

INGREDIENTS:

2 carrots

1/2 bunch Thai basil

16 oz cherry tomatoes or combination of sungolds

1 english cucumber

1 tbsp chili oil

1/2 tsp sea salt

6 red chilies

1 tsp natural rice vinegar

1 tsp sesame oil

INSTRUCTIONS:

1. Start by cleaning all your produce and then proceed to peel the skin of the carrot and cucumber.

2. Chop the cucumber, carrot and tomatoes into thin slices.

3. Add to a mixing bowl and then add in the sesame seed oil , chili oil and the rice vinegar.

4. Use cooking scissors to make thin and long strips of thai basil for your dish

5. Combine all ingredients and then add in you sea salt to taste add more or less based on your personal preference.
