SOY CHORIZO TOFU SCRAMBLE TOAST

This soy chorizo tofu scramble toast is a savory breakfast option or a quick meal that you can put together quickly that takes minimum time to come together in one skillet. The sky’s the limit as to what types of toppings you can add to your toast but for today I opted to use fresh tomatoes, parsley and smashed avocado. But the beauty of cooking in my opinion is that you can use what you have in your home that needs to be used up and get creative.

INGREDIENTS:

1 tbsp avocado oil or olive oil or neutral oil

1 block extra firm tofu

2 tbsp nutritional yeast

1 tsp sea salt

1 tsp tumeric

1 tsp garlic powder

1 tsp onion powder

2 tbsp almond milk or non dairy milk

1 soy chorizo package

INSTRUCTIONS:

1. Heat the avocado oil up in a pan over medium heat

2. Mash the block of tofu in the pan with a potato masher or with your hands

3.Cook for 3-4 minutes until the water from the tofu is mostly gone

4. Add in the nutritional yeast, sea salt, turmeric, garlic powder and onion powder

5. Pour in the non dairy milk into the pan and stir to mix it up once cooked sit it to the side

6.Cook the soy chorizo in the same skillet and cook for 5 minutes

7.Toast your bread and then add your smashed avocado, fresh tomato slices and herbs
