VEGAN CALDO DE ALBONDIGAS
Vegan Caldo De Albondigas or Mexican Meatball Soup is a delicious soup for you and your family to enjoy and it takes about 30 minutes to make from start to finish. Here’s what you need to make it.
INGREDIENTS:
6 tomatoes
6 russet potatoes
4 carrots
3 to 4 spanish or regular zucchini
2 white onions
6 garlic cloves
2 bay leaves
15 oz tomato sauce
4 tbsp chicken boullion
2 tsp cumin
1 tsp black pepper
8 cups water
2 tbsp avocado oil
vegan meatballs fresh or frozen
INSTRUCTIONS:
1. Wash your carrots, tomatoes , potatoes and your zucchini
2. Heat up your avocado oil inside your pot and sautee your carrots, onions, garlic , potatoes and zucchini.
3. Add in your water, bouillon and tomato sauce
4. Cook until veggies are fork tender and soft
5. Cook your vegan meatballs per package instructions
6. Combine your veggies in the soup with your vegan meatballs and enjoy!
