GARBANZO SALAD

My garbanzo bean salad is perfect for meal prep a quick snack throughout the day or paired on the side of your meal. It requires minimal ingredients and most you may already have on hand in your fridge and pantry. This is one I am sure you will enjoy this light and fresh salad.

INGREDIENTS:

2 avocados

2 cans garbanzo beans

4 persian cucumbers

1 large purple onion

1 jalapeno

2 serranos

16 oz cherry tomatoes

1 bunch cilantro

2 limes

sea salt

black pepper

INSTRUCTIONS:

1. Start by cleaning all produce and draining out the garbanzo beans with water. You can keep the skin on but this is a personal choice. Put them into a mixing bowl.

2. Chop up all the veggies into small pieces and then add them into the mixing bowl.

3. Squeeze the fresh lime juice over the beans and also veggies.

4. Add in the sea salt, black pepper to taste.

5. Add in chop avocado at the end so it doesn’t become smashed during the mixing. If you are meal prepping this or need this for later on in the day or next then wait to add in the lime juice and the avocado.

6. Enjoy on it’s own or with your favorite tortilla chips or tostadas
