VEGAN OREO ICE CREAM CAKE
My simple Vegan Oreo ice cream cake that comes together with less than five ingredients that you can purchase at the store and have it ready for the same day or you can make it a day in advance. Perfect for the oreo lover in your life!
Immediately , this was only my second time making this oreo cake as my son Christiano is all about all things chocolate and oreos. I will admit this was so delicious and creamy and the entire family enjoyed it for his 7th birthday and also a few days afterwards.
Personally, I think that is the beauty about ice cream cakes is that they are simple and you can also keep enjoying it up to 3-4 days later on versus a traditional birthday cake. You can also make the topping the way you want either with fresh fruits like I did today with garden fresh mint, strawberries and additional oreo cookies and or vegan whipped cream. As far as the decorations the sky is also the limit there’s so many options you can shop on Amazon to make for your loved one to truly have the full theme. INGREDIENTS:
Ice Cream Filling :
3 vegan oreo ice cream tubs
No Bake Crust:
1 large family sized oreo
1 glass cup
8’ springboard
Toppings:
1 lb strawberries
12 oreo cookies
mint
whipped cream

INSTRUCTIONS:
1. Start by making the crust add all ingredients to a food processor and pulse and mix until combined
2. Add ingredients to a tart pan or a spring board
3. Use the back of a glass or measuring cup to press and smooth out the crust in the pan ensuring that all ingredients are smooth and edges are evenly distributed.
4. Next , add to a blender or food processor the canned coconut milk,maple syrup, melted coconut oil (30 seconds), vanilla, sea salt and the TCHO cocoa unsweetened powder and combine until smooth
5. If your preparing this cake to enjoy on the same day allow it to set for 3-5 hours in the fridge or you need it sooner place it in the freezer covered with plastic wrap for 2 hours .
6. Once you are ready to serve top it with your seasonal berries, mint and optional but delicious TCHO roasted cacao nibs.
