ROASTED QUINOA BOWL
Roasted one pot quinoa bowl comes all together in your instant pot. Perfect for those days that you don’t want or have the extra time to cook and you still want to fuel your body with the goods. This combines two different types of peppers, white beans , leftover grilled corn and you can also use the leftover salsa you have in the fridge or in the pantry to throw on top. You want to have a little comfort with this bowl then add a little vegan sour cream to it.
INGREDIENTS:
1 roasted red bell pepper
1 roasted poblano
salsa
2 cups quinoa
2 cups water
cilantro
2 cups corn
sea salt
black pepper
1 can white beans
vegan sour cream
INSTRUCTIONS:
1. Start by cleaning all produce and draining out the white beans with water.
2. Char your red bell pepper and poblano pepper until blackened all around
3. Clean in the sink your quinoa to remove any dirt or debris
4. Put the quinoa in your rice cooker and select the quinoa setting add the appropriate amount of water
5. Add in white beans, bell peppers, grilled corn, and poblano.
6. Add in a pinch of sea salt to the quinoa before it starts to cook in the rice cooker
7. Once it’s done cooking add to a bowl and add fresh cilantro , your favorite salsa and vegan sour cream
