VEGAN VANILLA CAKE
Fluffy and moist vanilla cake that is completely vegan and perfect for any occasion and comes together quickly in one bowl. It also has an unlikely ingredient that is in your pantry that you will not taste but adds some additional moisture into the cake. This happens to be a Limon family favorite and my hope is that your family will enjoy it just as much. Whether you enjoy it as a cake or make them into delicious cupcakes! You can’t go wrong either way.
INGREDIENTS:
Cake:
1 1/4 cup non dairy milk I have tested with soy & almond milk
2 tsp apple cider vinegar
1/2 cup aguafaba
1/2 cup vegan butter at room temperature
1/2 cup canola oil
1 1/2 cups sugar
1 tbsp vanilla extract
3 cups all purpose flour or cake flour
1 tbsp baking powder
1/2 tsp sea salt
Vegan Buttercream Frosting:
1 cup vegan butter room temperature
3 cups powdered sugar
2-3 tbsp non dairy milk
1 tsp vanilla extract

INSTRUCTIONS:
1. Heat oven to 350 F and prepare the cake pans by lining them with parchment paper and spraying it well with oil.
2. Combine the non dairy milk and apple cider vinegar in a small bowl and stir a little until mixed and set aside.
3. Pour the liquid from the can chickpeas into a bowl and whisk for a minute until foam appears. This will be your egg substitute in this recipe.
4. Use a hand mixer or stand mixer with a paddle attachment and cream together the butter, canola oil and sugar until well combined.
5. Add the chickpea liquid into the bowl with the creamed butter,oil,sugar and the vanilla extract and beat until well combined.
6. In a medium bowl whisk together the flour, baking powder and salt.
7. To the main bowl with the wet mixture with the mixer on low add the flour mixture and vegan buttermilk.
8. Pour cake batter in the pan and bake for 30-35 minutes until you have golden brown cakes.
9. Allow the cakes to cool down in the pans for 15 minutes and then carefully invert them onto a cooling rack. You can place in the fridge if you want to speed up the process and get to the icing.
