DIJON MUSTARD PICKLED MAC SALAD
Perfect for your next summer bbq, dinner or meal prep for the week is my dijon mustard pickled mac salad. This recipe is broken down for you on how to make the pickled mac salad as well as the creamy vegan, dairy free dressing to toss it in. Hope that you will give this recipe a go!
INGREDIENTS:
Pickled Mac Salad:
1/4 fresh dill or freeze fried
1 small jar kosher pickles
1 small lemon squeezed with juice
1 box macaroni noodles
1 small red onion
10 sweet peppers
Creamy Dressing:
2 tbsp apple cider vinegar
1/4 tsp black pepper
2 tsp dijon mustard or stone mustard
1/4 tsp sea salt
1 tbsp sugar
1/4 paprika
1 cup vegan mayo
INSTRUCTIONS:
1. Start by boiling a pot of water add salt once the water is bubbling
2. Add your macaroni to the pot and cook until al dente
3. Set aside the cooked noodles and clean all the veggies
4. Chop up all your veggies and add to a mixing bowl with the freshly lemon juice.
5. Prepare the creamy dressing in a bowl with apple cider vinegar, mayo, mustard, sea salt, paprika and vegan mayo.
6. Combine the macaroni noodles with the creamy dressing and then add in your chopped veggies and fold it all in.
7. Serve immediately or put it inside the fridge for up to 4 days.
