GRILLED CORN SALAD
Take advantage of corn when it is in season and make this simple four ingredient grilled corn salad. Don’t have corn that is in season at the moment no problem you can also make this with frozen corn as well. As I always say use what you have on hand and make adjustments if needed. Perfect on it’s own or you can have this with your burrito, taco, or with your favorite meat replacement the sky’s the limit and it goes well with so many options!
INGREDIENTS:
avocado oil
1 bag frozen corn or 4 fresh corn
1 bunch basil or cilantro
black pepper
16 oz cherry tomatoes
1 large purple
sea salt
INSTRUCTIONS:
1. Start by cleaning of your fresh corn or unbag the frozen corn
2. Place cast iron skillet with your avocado oil
3. Add your corn to the skillet
4. Season with black pepper and sea salt to taste cook until light brown char
5. Remove the corn add to mixing bowl and toss in freshly cut basil,tomatoes and purple onion
6. Toss all the ingredients in the bowl adjust salt and pepper if needed
7. Enjoy with your favorite burrito, chips or tacos
