STUFFED LENTIL POBLANO PEPPERS

Stuffed Poblano Peppers with lentils, Mexican squash, bell peppers and garlic rice with homemade tomato sauce.
Start by washing your lentils off in cold water in your pot . I generally cook 2 cups worth for this recipe to be able to enjoy some throughout the week with meals . Once you’re done rinsing off the lentils add 4 cups water . Add in a splash of avocado oil to your pot then add in sea salt to taste .
Chop up one white onion, add in 3 Serranos and 3 jalapeños for some spice . If you’re not a fan of heat then don’t add in the peppers . Add in the Epazote herb into the pot and make sure you don’t burn your lentils . If you notice they look dry add in more water or they will burn .
Sauté in avocado oil your Mexican squash and bell peppers until softened. Your poblanos peppers are cooked throughly by roasting them . This can be done on the stove top or in the oven until they are blackened. Remove the black exterior and then stuff them with garlic rice , veggies and lentils . Below is my recipe for the sauce that I enjoy it in .
INGREDIENTS:
Tomato Sauce :
6 roma tomatoes
60 oz water
6 garlic cloves
2 tbsp chicken bouillon
2 tbsp mexican oregano
1 tbsp flour @bobsredmill
1 large white or yellow onion
canola oil to coat the cast iron skillet
Start by adding your water to a deep pot . Clean your tomatoes and then place them inside the water alongside the garlic cloves and onion .
Add in the Mexican oregano, chicken bouillon yes there’s a vegan one I have it listed in my Amazon store . Let everything come to a boil once you see the tomatoes skin blistered open then they are ready . Place them into your blender along with some of the water be careful not to add too much water .
Blend everything up and set aside . Get a cast iron skillet add a neutral oil this can be canola or vegetable oil . Pour in the sauce into the oil and mix it up on a light boil .
Then get your flour add it in slowly and this will thicken the sauce mixture . DO NOT add all at once it will ruin the sauce nice and slow . Pair with your stuffed peppers or when you make chile rellenos . My kids personally love it with quesadillas to dip as well ! Enjoy .
